Banana Nut Muffins

These muffins are dense. High in fiber and protein. They are vegan as well. Great for a gotta run snack.
Ingredients:
2 cups oat bran flour
1/2 cup soy flour
1/2 cup wheat germ
3 small bananas
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon active dry yeast
2 tablespoons chopped walnuts
1/2 cup soymilk
3/4 cup honey
1/2 cup canola oil
Directions:
1. Preheat oven to 350°F.
2. Mix all ingredients together with electric mixer.
3. Use muffin liners and fill 3/4 full.
4. Let stand for ten minutes until mixture rises a little.
5. Bake for 30-40 minutes.
