These brownies are so rich and moist because of the fruit added. They are delicious! This is another wonderful recipe from Lucy Waverman
Ingredients:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder, sifted
1 tsp. baking powder
1 tsp. salt
1/3 cup water
1/4 cup prune baby food
1/4 cup mashed ripe banana
1 cup vegetable or canola oil
1 tsp. vanilla extract
3/4 cup chocolate chips
1/2 cup dried cherries
Directions:
1. Preheat oven to 350 F (180 C).
2. Combine flour, sugar, cocoa powder, baking powder and salt in a large bowl.
3. Combine water, prune baby food, banana, oil and vanilla and stir into dry ingredients.
4. Stir in chocolate chips and dried cherries and mix until evenly combined.
5. Grease a 9 x 13-inch (23 x 32-cm) baking pan and line the bottom with parchment paper.
6. Spread mixture evenly into pan and bake for 30 to 35 minutes or until a cake tester comes out clean.
7. Let cool fully before cutting.
8. Makes about 16 brownies.
9. Note: If you want a rich dark taste, then use a dark European chocolate that has a high amount of cocoa solids in it - 75 percent for the chips.
