These muffins are quick and easy can be baking while you are cooking bacon and eggs for breakfast. Or is really easy to have little helpers with you.
Ingredients:
2 cups all purpose flour
3/4 cup whitle sugar
2 teaspoons baking soda
3 over ripe bananas mashed (one cup measure)
1 cup miracle whip salad dressing
2/3 cup semi-sweet chocolate chips or chopped walnuts
Directions:
1. Mix together flour, sugar, baking soda in a large bowl
2. Mash bananas and add salad dressing
3. Mix well
4. Add to dry mixture, mixing well.
5. Stir in chocolate chips or walnuts
6. Fill greased muffin tins 2/3 full bake.
7. Test doneness with a tester inserted in middle comes out clean.
8. NOTE: This also makes a really good loaf follow the directions and increase baking time 50-60 minutes.
9. Also makes a nice snack cake iced with peanut butter icing. Increase baking time 35-40 minutes
