Banana-Maple Towers

A smart, low fat dessert to impress your guests.
Ingredients:
1/2 teaspoon butter
1 large banana
2 eggs
1 teaspoon vanilla extract
2 ounces fresh breadcrumbs
1 ounce superfine sugar
1 1/4 cups milk
2 ounces sultanas
4 tablespoons maple syrup
4 teaspoons low-fat creme fraiche
nutmeg, grated (optional)
Directions:
1. Preheat the oven to 400F and grease four dariole moulds or heatproof teacups with the butter - this will help you turn out the puddings and add a touch more flavour.
2. Mash the banana in a mixing bowl, using a fork. Beat in the eggs and vanilla extract, then stir in the breadcrumbs, sugar, milk and sultanas.
3. Spoon the mixture evenly into the moulds or teacups.
4. Arrange them in a small roasting dish, and then pour in enough hot water to reach about halfway up their sides.
5. Bake uncovered, for 35 minutes, until set. Cool for a few moments, then turn out onto small serving plates.
6. Drizzle a tablespoon of maple syrup over each pudding, then finish with a teaspoon of crème fraîche and a sprinkle of freshly grated nutmeg, if you like.
