Bananas lend themselves to natural sweeteners like honey. These soft beauties bake up nicely and are a great egg-free breakfast treat.
Ingredients:
1 3/4 cups about 4 mashed bananas
3/4 cup packed light brown sugar
1/4 cup honey
4 tablespoons margarine, melted
2 cups flour
1 teaspoon baking powder
1 pinch salt
Directions:
1. Preheat oven to 350. Place 12 muffin cups in pan.
2. In large bowl, combine bananas, sugar, honey, and margarine. Beat with an electric mixer until well blended. Slowly add the flour, baking powder, and salt and mix well.
3. Spoon the batter into the cups. Bake for 20 minutes. Remove pan from oven and cool for 5 minutes. Remove the muffins and cool on a rack.
4. Store in airtight container for up to 2 days, or freeze for up to 3 months.
