Banana, Honey and Walnut Ice Cream |

A truly sublime flavour combination. Ingredients:
2 cups milk |
1 cup honey |
6 egg yolks, room temperature |
1 1/3 cups whipping cream, beaten to soft peaks |
2 medium ripe bananas, peeled and mashed |
1 cup coarsely chopped walnuts |
Directions:
1. Combine milk and honey in medium saucepan. 2. Bring almost to simmer, stirring occasionally. 3. Beat yolks until pale yellow. 4. Gradually beat in hot milk. 5. Set bowl into a larger bowl filled with ice (or cover with plastic wrap directly on the surface of the custard and chill overnight). 6. Cool custard completely, stirring occasionally. 7. Fold in whipped cream and bananas. 8. Process according to ice cream makerÂ’s manufacturerÂ’s instructions, until half set. 9. Add walnuts and process until set. 10. Let ripen in freezer several hours before serving. |
