BANANA GELATO This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Jennet Estate in Allen, Texas in 1983.
Ingredients:
6 egg yolks
3/4 cup granulated sugar
3-1/4 cups whole milk
1 vanilla bean split in half lengthwise
3 ripe bananas peeled
2 tablespoons lime juice
Directions:
1. Whisk together sugar and egg yolks in a saucepan.
2. Place mixture over low heat and whisk in milk then add vanilla bean.
3. Cook stirring until mixture is smooth and lightly thickened.
4. When mixture is thick enough to coat the back of a spoon remove from heat and remove bean.
5. Strain any lumps that formed during cooking then add vanilla extract and stir.
6. Allow mixture to cool to room temperature.
7. In a food processor or blender puree bananas with lime juice until smooth.
8. Gradually add in vanilla custard mixture then blend until incorporated.
9. Freeze in an ice cream maker following the manufacturer's guidelines.
10. Refrigerate until thoroughly chilled.
