Banana French Toast

Taken from Nita Mehta's Breakfast Cookbook
Ingredients:
2 eggs
1 banana, mashed
2 tablespoons brown sugar
1/4 teaspoon cinnamon
4 slices bread
4 tablespoons oil
Directions:
1. Whisk 1 eggs in a broad shallow bowl, set aside.
2. Combine banana, sugar and cinnamon in a small bowl.
3. Spread half of banana mixture on a slice.
4. Press another slice on to it.
5. Dip the banana sandwich into the beaten egg.
6. Turn after a minute so both sides are coated.
7. Heat 2 tbs oil in a non-stick pan.
8. Gently place sandwich in the hot pan.
9. Reduce heat and cook for a minute until outside egg is cooked.
10. Turn to cook the other side.
11. Remove from pan and serve warm.
12. Repeat with remaining bread and mixtures.
