Wonderful soft, cake-like cookies with a lovely butter-banana frosting. A great way to use up over-ripe bananas.
Ingredients:
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/2 cup smart balance
3/4 cup granulated sugar
2 eggs, large
1/2 teaspoon vanilla extract
1 cup mashed banana
1/2 cup chopped walnuts
2 cups sifted powdered sugar
1/4 cup mashed banana
2 tablespoons smart balance
1/2 teaspoon vanilla extract
Directions:
1. Preheat oven to 375.
2. Grease a cookie sheet. Stir together flour, baking powder, cinnamon, baking soda, salt and cloves.
3. In a mixer bowl beat 1/2 cup smart balance for 30 seconds, then add granulated sugar and beat till fluffy. Add eggs and 1/2 teaspoon of vanilla. Beat well.
4. Add dry ingredients and 1 cup mashed banana (2 medium) alternately to beaten mixter, beating after each addition.
5. Stir in chopped walnuts. Drop from a teaspoon 2 inches apart onto well greased cookie sheet. Bake at 375 for 10 to 12 minutes.
6. Remove from cooke sheet immediately and cool on a wire rack. Frost cookies with Banana Butter Frosting.
7. Directions for frosting: Stir together sifted powdered sugar, 1/4 cup mashed banana (1 medium) and 1/2 teaspoon vanilla extract; mix well. If necessary, add additional powdered sugar to make of spreading consistency.
