While sailing I found myself with a bunch of bananas that were ripening too quickly, so came up with this quick, easy, delicious dessert. It's sophisticated enough to serve to guest!
Ingredients:
4 large firm ripe bananas
1 tablespoon lime juice (or lemon juice)
1 tablespoon orange-flavored liqueur (like cointreau)
1/4 teaspoon grated nutmeg
3 tablespoons brown sugar
1/4 cup all-purpose flour
1/4 cup oatmeal
1/4 cup coconut (shredded)
1/4 cup butter
Directions:
1. Preheat oven to 400 degrees.
2. Butter 9 inch pie pan or shallow baking dish.
3. Topping:.
4. In small bowl mix together flour, oatmeal, sugar, coconut and butter.
5. With fingertips, blend the ingredients until the mixture resembles coarse crumbs.
6. In separate bowl combine orange liquor and lime juice.
7. Peel bananas and slice them on the diagnal in 1/4 inch ovals.
8. Arrange the slices in a single overlapping layer and sprinkle with lime juice mixture, nutmeg and brown sugar.
9. Sprinkle topping evenly over the bananas.
10. Bake until the juices are bubbly and the topping is crisp and brown, about 20 minutes.
11. Serve warm with fresh cream, yogurt or ice cream.
