BANANA COFFEECAKE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the White Estate in Frisco, Texas in 1984.
Ingredients:
batter
1 stick margarine at room temperature
3 large bananas mashed
1 egg white whipped
1 tablespoon lemon peel grated
1 teaspoon vanilla
1/2 cup skim milk at room temperature
2 cups unbleached flour
3/4 cup granulated sugar
1 /4 teaspoon salt
1 tablespoon baking powder topping
1/3 cup brown sugar packed
1 /3 cup unbleached flour
3/4 teaspoon cinnamon
Directions:
1. Preheat oven at 375 then spray a spring form pan with cooking spray and coat lightly with flour.
2. Combine margarine, bananas, egg white, lemon peel, vanilla and milk.
3. In another bowl combine flour, sugar, salt and baking powder.
4. Mix wet ingredients with dry ingredients just until moistened then pour into prepared pan.
5. To prepare topping combine brown sugar, flour and cinnamon then sprinkle over batter.
6. Bake 45 minutes then allow to cool before serving.
