Banana Coconut Loaf

A great bread/cake for breakfast.
Ingredients:
1 cup coconut
1 cup caster sugar
1 1/2 cups self-raising flour
1 cup mashed banana
1 cup low-fat coconut milk
1 egg, lightly beaten
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 170 Degrees Celsius.
2. Grease loaf pan.
3. Combine dry ingredients.
4. Combine bananas, milk, egg and vanilla separately.
5. Pour into flour mixture and combine.
6. Put into to tin and bake for 1 hour until skewer inserted comes out clean.
7. Serve as you would toast.
