Banana Coconut Ice Slice

The banana layer makes this coconut ice slice twice as nice! ...(zoe, that was SO lame just now...) so yeah, a banana bottom layer topped with coconut ice. Easily veganised is you so desire. inspired by a recipe from the Biscuit & Slice Bible, (buy it, seriously) the banana was my idea.
Ingredients:
100g butter, softened
1/3 cup sugar
1 really ripe (like blackening) banana, mashed
1 cup self raising flour
3/4 cup dessicated (shredded to north americans) coconut
**** for the topping
50g butter, melted
2 cups icing sugar
1 cup dessicated coconut
3 tbsp milk
1 tsp vanilla
Directions:
1. Preheat oven to 180 C (thats 350F) and lightly grease your slice tray.
2. In a large bowl, cream together the butter and sugar until fluffy, then add mashed banana. stir until well combined.
3. Add in the flour and coconut and mix well.
4. Press mixture into your tin, poke the top all over with a fork and bake for 30 minutes.
5. To make the icingjust combine everything in a bowl and spread over the slice while its still hot.
6. Allow to cool before slicing it up in the tin.
7. I find it stores well (and holds together better) if kept in a tupperware in the fridge.
8. ALSO (i was gonna do this but forgot...) instead of adding milk and vanilla in the icing, add the pulp of a passionfruit and a small squeeze of lemon. Dang that would've been gooood...NEXT TIME :)
