Ingredients:
1 2/3 cup all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
3 small ripe bananas
1/4 cup oil
1/4 cup yogurt
1 cup chocolate chips
Directions:
1. Heat oven to 350. Spray muffin cups with cooking spray or use baking cups.
2. Thoroughly mix flour, sugar, baking soda, baking powder and salt in a large bowl.
3. Break eggs into another bowl. Add smashed bananas, yogurt and oil and whisk until blended. Stir in chocolate chips. Pour over dry ingredient and fold until dry ingredients are moistened. Scoop evenly in 12 cups and bake 20-25 minutes until springy to the touch in the center. Turn out onto a cooling rack. Muffins freeze well after cooling.
