This is a very moist and very tasty banana cake. Add sour cream chocolate frosting and you have a match made in heaven. Enjoy
Ingredients:
2/3 cup shortening
1-1/3 cup granulated sugar
2 eggs
2 large ripe bananas mashed
2-1/2 cups cake flour
1-1/4 teaspoon baking powder
1-1/4 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1 cup buttermilk
frosting
2 tablespoons butter
3 cups icing sugar
4 tablespoons sour cream
1/8 teaspoon salt
1 teaspoon cocoa
Directions:
1. Beat shortening and sugar together then beat in eggs until thoroughly blended.
2. Beat in bananas.
3. Mix dry ingredients together and add alternately in thirds with buttermilk.
4. Butter and flour rectangular pan then pour batter in and bake at 350 for 30 minutes.
5. For frosting beat all ingredients together until spreadable.
