Banana Cake With Cream Cheese Frosting

The number of servings will depend on how big the slices are.
Ingredients:
1 1/4 cups granulated_sugar
1/2 cup soft butter
2 eggs
1 tsp baking_soda
1/4 tsp salt
4 tbsps sour_cream
3/4 cup pecans or walnuts , chopped (optional)
1 cup very ripe banana , mashed
1 1/2 cups pastry or cake_flour
1 tsp vanilla_extract
cream cheese frosting
1 box powdered_sugar (1 pound)
3 tbsp milk
1 3oz package cream_cheese , softened
1/4 cup soft butter
1 tsp vanilla_extract
1/2 cup chopped walnuts or pecans (optional)
1/4 cup chopped raisins (optional)
Directions:
1. Pre heat oven to 350 degrees.
2. Grease a 7-1/4 x 11-1/4 x 1-1/2 inch loaf pan or a 9X2X9 inch square pan and set aside.
3. With an electric mixer, cream butter and sugar until light and fluffy. Break eggs into a bowl and lightly beat them.
4. Add eggs to sugar and butter mixture, stirring lightly to mix.
5. Combine baking soda and sour cream and add to the creamed mixture.
6. Beat well, then add bananas, flour, salt and vanilla, stirring gently or mixing on low speed a few minutes.
7. Bake for 35-45 minutes or until a toothpick inserted in the center of the loaf comes out clean.
8. For a banana layer cake, double the recipe and bake in two ten inch round pans.
9. Cream Cheese Frosting
10. In a medium sized mixing bowl with an electric mixer, cream butter and cream cheese until light and fluffy.
11. Add powdered sugar, milk and vanilla.
12. Beat until smooth and creamy.
13. Fold in nuts and raisins if used.
14. Makes about 2 cups icing, enough for the top and sides of 2 8 or 9 inch layers, or about 24 cup cakes.
