This is a very moist, rich tasting cake that my stepson thought was the best cake that I've made. The combination of bananas and butterscotch was exquisite. Also the recipe makes 2 9 x 5 loaf pan sized cakes so you could freeze one if necessary.
Ingredients:
3 1/2 cups all purpose flour
4 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp salt
2 cups ripe mashed bananas
1 1/2 cups sugar
2 eggs
1/2 cup butter, melted
1/2 cup evaporated milk
12 ounce package butterscotch morsels
Directions:
1. Grease and flour 2 9 x 5 inch loaf pans.
2. In small bowl combine the dry ingredients and set aside.
3. In a large bowl combine the mashed bananas, sugar, eggs and melted butter.
4. Beat until creamy.
5. Add the dry ingredients alternately with the milk and the banana mixture.
6. Make sure it is all well blended.
7. Stir in the butterscotch morsels.
8. Pour the batter into the prepared pans.
9. Bake in 350 degree oven for 1 hour or until toothpick inserted in the center comes out clean.
