Banana Buttermilk Pancakes With Berry Sauce

This is a great pancake recipe that I obtained from my friend who owns a bed and breakfast in East Texas. This is one of her signature dishes and one that is highly requested. Enjoy
Ingredients:
1 cup granola
2 cups unbleached white flour
2 teaspoons baking soda
4 teaspoons baking powder
3/4 teaspoon salt
4 ripe bananas pureed
1/4 cup honey
2 cups buttermilk
2 eggs separated with whites whipped to medium peaks
1/4 cup vegetable oil
berry sauce
1/3 cup orange juice
2 cups fresh or frozen blueberries
1 cup fresh or frozen blackberries
1 cup fresh or frozen raspberries
1 teaspoon orange zest
1 teaspoon lemon zest
1/2 cup honey
1/4 cup berry liquor
1 tablespoon cornstarch
Directions:
1. Mix all dry ingredients together.
2. Mix wet ingredients except whites then combine with dry ingredients.
3. Stir in egg whites and stir gently until just combined being careful not to over mix.
4. Cook in a lightly greased pan or griddle until small bubbles form on surface.
5. Flip and brown the other side then top with butter and berry sauce.
6. Reserve 1/4 cup of each berry then add orange juice and remaining berries to saucepan.
7. Cook at a simmer for 15 minutes then add zest and honey.
8. Simmer while stirring until blended then remove from heat and add liquor.
9. Return to heat and simmer 5 minutes.
10. Add cornstarch to 2 tablespoons cold water then stir until liquefied and add to pan.
11. Stir constantly until thickened approximately 2 minutes then add reserved berries.
12. Stir gently until it returns to a simmer then turn off heat and cool just until warm.
13. Spoon over pancakes and serve immediately.
