These are definitely cupcakes; pleasantly sweet, moist, light and fluffy little cakes with a perfect rise - NOT banana bread or muffins. Easy and fun to make, they smell great while baking and taste fantastic! Iced with a cream-cheese or vanilla frosting, simply divine.
Ingredients:
1/2 cup shortening
1 cup brown sugar
2 eggs
1 heaping teaspoon vanilla extract
4 large over-ripe bananas, mashed (roughly 2 cups)
1 tbsp. buttermilk powder
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
Directions:
1. In a large mixing bowl, cream shortening and sugar. Add the eggs, vanilla, bananas and buttermilk powder. Combine the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full.
2. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely.
