Ingredients:
3 tb vegetable oil
2/3 cup packed brown sugar
2 large eggs
1 tsp vanilla
1 cup gluten free garbanzo and fava flour
1/2 cup potato starch
1/4 cup tapioca flour
1/2 tsp xanthan gum
1/2 tsp sea salt
2 tsp baking powder
1 tsp cinnamon, saigon (premium)
1/8 tsp cardamon
1/8 tsp mace (ground)
1-1/2 cups mashed ripe bananas
1/2 cup chopped pecan halves
1/2 cup raisins (unsulfured)
Directions:
1. Preheat oven to 350F.
2. Coat a 9 x 5 nonstick pan (or two 5 x 2-1/2 pans) with cooking spray; set aside.
3. Cream the oil, sugar, eggs, and vanilla together.
4. Mix together the flour, xanthan gum, salt, baking powder and spices. Add flour mixture to egg mixture, alternating with bananas. Stir in nuts and raisins. Batter will be somewhat soft.
5. Bake the 9 x 5 pan for 1 hour, bake the 5 x 2-1/2 pans for 45 minutes.
6. Cool on wire rack before cutting.
7. Yield: 8 servings
