Ingredients:
1 1/2 cups bananas, mashed 375 ml
2 cups demerara sugar 500 ml
2 tsp lemon juice 10 ml
1 tsp sea salt 5 ml
2 eggs
2/3 cup canola oil 160 ml
3/4 cup 2% milk 180 ml
2 1/2 cups unbleached white flour 625 ml
1 1/3 tsp baking soda 8 ml
Directions:
1. Preheat oven to 375°F degrees. Prepare two 9” x 5” loaf pans.
2. In a mixer or bowl, combine bananas and sugar. Mix well.
3. Add salt and lemon juice and mix.
4. Add eggs, mixing on low speed.
5. Add oil, milk, flour and soda; mix on low speed until combined.
6. Pour into two greased loaf pans and bake at 375°F degrees for 1 hour or until done. For last 15 minutes cover with foil to prevent bread from getting too dark. Yields 2 loaves.
