This bread calls for sifted ingredients besides both baking powder and baking soda, not just one or the other. It comes out more light and fluffy than most banana breads.
Ingredients:
1 1/4 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar (fructose for diabetics)
2 eggs, beaten
2 bananas, mashed
1/4 c. nuts of your choice (optional)
Directions:
1. Sift first four ingredients into small bowl.
2. Beat next two ingredients in large bowl.
3. Add eggs and beat until combined.
4. Alternately add flour mixture and bananas, a little at a time, beating after each addition.
5. Add nuts and stir by hand.
6. Bake at 350 degrees in a greased loaf pan for 50-60 minutes or until toothpick comes out clean.
7. ***If using smaller loaf pans, check doneness with toothpick after 20-30 minutes. Muffin tins take 20-25 minutes.
8. ***For a coffee cake-type bread, try adding your own crumb topping to the top and/or middle of batter before baking.
