Low fat, High fibre bread
Ingredients:
1 1/2 cups unbleached flour
1/2 cup whole wheat flour
1/2 cup raw sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
1 teaspoon cinnamon
1/2 cup toasted walnuts, chopped
1 1/2 cups ripe bananas, mashed (about 3 to 4)
1/4 vanilla yogurt
2 eggs
1/3 cup sunflower oil
2 teaspoons vanilla
Directions:
1. In a bowl, mix the flour, baking soda, baking powder, salt and cinnamon and set aside. In a large bowl, combine the oil, vanilla, yogurt and eggs; mix well. Add in bananas. Gradually add the dry ingredients and stir until combined. Fold in walnuts.
2. Pour batter into a greased 9x5x3 inch loaf pan. Bake at 170ÂșC for 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
