Whenever I have bananas that are too ripe to eat I freeze them in a ziplock bag. You need really ripe bananas for this recipe.
Ingredients:
1/2 cup margarine, softened
2 eggs, beaten
1 1/2 tablespoons milk
2 cups flour
1/4 teaspoon salt
1 cup sugar
1 cup mashed banana (about 2)
1 teaspoon lemon juice
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup nuts (optional)
Directions:
1. Mix all ingredients with a hand mixer.
2. Pour into 2 greased loaf pans.
3. Let sit at room temperature for 20 minutes and then bake for 1 hour at 350 degrees.
