I have been eating lots of steel cut oatmeal lately and this is a very tasty way to do it! It's delightfully sweet without being fake and so creamy, the berries oats and good fiber will fill you right up! make sure you use REAL maple syrup not pancake syrup and if you don't have it i would suggest the sugar instead. add more cream as desired.
Ingredients:
1/2 cup steel cut oats
2 1/4 cups water (may use less but i always find i need more than 2)
1 dash salt (very small dash!)
1/2 teaspoon vanilla
1/2-1 banana
4 strawberries, chopped
1/2 cup blueberries
1/4 cup slivered almonds (optional)
2 tablespoons flax seed meal
2 tablespoons maple syrup (or brown sugar)
2 -4 tablespoons heavy cream or 2 -4 tablespoons half-and-half
Directions:
1. Bring water to a boil and add oats, stirring until a little thicker, about 5 minutes. reduce heat and simmer uncovered for 20-30 more until desired texture. they should be thick and soft but not mush. (or follow instructions on package).
2. when you add the oats add salt and vanilla.
3. after simmering 15 minutes add the banana to the pot, i dice it pretty small (quarter it lengthwise and chop into little pieces).
4. when oats are done divide between 2 bowls and add 1 tbs flax and maple syrup to each, stirring it inches.
5. top with berries, almonds and cream and stir in i you like. i usually stir them in and then add more cream or whole milk to the top.
6. eat it!
