BANANA AND POMEGRANATE SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stinson Estate in Fort Worth, Texas in 1992.
Ingredients:
1 medium pomegranate
2 medium firm ripe bananas
2 tablespoons fresh lime juice
1 tablespoon maple or date sugar
1/4 teaspoon salt
Directions:
1. Cut pomegranate into quarters and twist each wedge to loosen seeds.
2. Gentle shake, tap, scoop and coax seeds onto serving plate and arrange in neat mound in center.
3. Peel bananas and slice on diagonal into 1/4 rounds.
4. Arrange in circle around pomegranate seeds then sprinkle with lime juice, sugar and salt.
5. Serve immediately.
