Balsamic Brown Rice Salad

A very tasty cold salad that's easy to make. It is meant to be served cold but I find that it is also good at room temperature.
Ingredients:
2 cups water
1 cup brown rice
1/4 cup red onion, diced
1/2 cup celery, diced
1/4 cup dried cranberries
1/2 cup balsamic vinaigrette dressing
1 tablespoon splenda sugar substitute, granulated (or sugar if you prefer)
Directions:
1. In a saucepan, bring water to a boil.
2. Stir in rice, cover, and reduce heat to low.
3. Simmer for 45 to 60 minutes, or until done.
4. Transfer rice to a serving bowl.
5. Stir in onion, celery, cranberries, balsamic vinaigrette dressing, and Splenda.
6. Cover, refrigerate, and serve cold.
