I'm experimenting with home-made energy bar recipes and came up with this. I've just made it and it seems good enough to share. It should last a long time in the fridge, if you can wait... I used hand tools but it would be quicker to use a machine.
Ingredients:
100 g dates
100 g pecans
100 g quick-cooking rolled oats
2 teaspoons water
Directions:
1. Put the dates into a big mixing bowl.
2. Using a rotary cheese grater, grate the pecans into the bowl.
3. Use a strong fork to cream together the dates & pecans.
4. Add the oats (small rolled oats, not jumbo) and water.
5. Knead the dough together.
6. Scoop up the dough 1 teaspoon at a time and roll into little balls.
