Baking Powder Biscuits

Low sodium version of the classic baking powder biscuit. Can also be added to soup as dumplings.
Ingredients:
2 cups all purpose flour
2 teaspoons baking powder
2 t unsalted butter
2 t canola oil
3/4 cup low fat milk
Directions:
1. Preheat oven to 450 degrees (F)
2. Lightly spray a baking sheet with vegetable oil spray.
3. In a medium bowl combine flour and baking powder. Using a pastry blender or two knives, cut butter into flour until pieces are about pea size. Add oil and milk to the mixture and stir until dough clings together. (If using for dumplings, add and extra Tablespoon or two of milk)
4. Lightly flour a flat surface, turn out dough and knead lightly four or five time. Pat dough out until it is abut 1/2 inch think. Dip edge of 2 round cutter into flour to keep dough from sticking. Cut out biscuits and place on baking sheet with edges of biscuits touching.
5. Bake for 10-12 minutes, or until golden brown.
