Bakery Lemon Poppyseed Muffins

Gail Kelly Robards. Robards and her brother Kelly owned and operated Muffins Etc. from 1986 to 2000. She has fond memories of their experience there and was happy to share the recipe with us.
Ingredients:
1 1/2 cups flour plus 1 tablespoon flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup poppy seeds
1/2 cup vegetable oil
1/2 cup milk
2 eggs
grated peel from 1 lemon
Directions:
1. INSTRUCTIONS
2. Preheat oven to 375 degrees. Grease a 12-cup muffin tin.
3. In a large bowl, stir together flour, sugar, baking powder, salt and poppy seeds.
4. In another bowl, whisk together oil, milk, eggs and lemon peel.
5. Make a well in the center of the dry ingredients.
6. Add milk mixture and stir just to combine.
7. Spoon batter into prepared muffin cups and bake 15 to 20 minutes or until a cake tester inserted into the center of one muffin comes out clean.
8. Cool 5 minutes, then remove muffins from muffin tin.
