Ingredients:
2 cups all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1 tablespoon instant espresso coffee powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup milk
1/2 cup vegetable oil
1 egg, lightly beaten
1 teaspoon vanilla
1 cup semisweet chocolate chips
Directions:
1. INSTRUCTIONS
2. Preheat oven to 375 degrees.
3. Grease a 12-cup muffin pan.
4. In a large bowl, stir together flour, sugar, baking powder, espresso powder, salt and cinnamon.
5. In another bowl, stir together milk, oil, egg and vanilla until blended.
6. Make a well in the center of the dry ingredients.
7. Add milk mixture and stir just to combine.
8. Stir in chocolate chips.
9. Spoon batter into prepared muffin cups
10. . Bake 15 to 20 minutes or until a cake tester inserted into a muffin comes out clean.
11. Remove muffin tin to wire rack and cool 5 minutes before removing muffins from cups.
