Baked Tomatoes, The Ultimate Side Dish

The title says it all...I copied these from one of my favorite restaurants in Miami. It is quick and easy, and you can even get your loved ones to eat a green vegetable. These tomatoes topped with LOW FAT creamed spinach and topped with cheese are a quick and delicious side dish to any meal.
Ingredients:
1 large tomato
4 cups fresh spinach (or frozen)
2-3 tbsp cream cheese
2 tbsp parmesan cheese
3 tsp garlic powder
2 tsp onion powder
1 tsp kosher salt, plus one
fresh cracked pepper
pinch paprika
4 slice american cheese
1 tbsp margarine
Directions:
1. Slice tomato into four equal slices and season with salt and pepper. Set aside. In a skillet over medium heat add margarine and wilt (or defrost) spinach. Once wilted (or heated thoroughly) add garlic powder, onion powder, salt, pepper and paprika. Saute for 3-4 minutes. Add cream cheese and stir until half melted and add Parmesan cheese. Combine and turn off heat. On a greased cookie sheet, space out tomatoes evenly and top with creamed spinach. On top of spinach, place slice of American cheese and bake at 350* until cheese is melted and begins to turn brown.
2. Note: to make this recipe even quicker, use pre-made creamed spinach
