These hearty tomatoes are a quick and easy side for grilled chicken breasts or pork chops.
Ingredients:
3 tablespoons light mayonnaise
2 tablespoons preshredded fresh parmesan cheese
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/8 teaspoon salt
1/8 teaspoon pepper
2 large tomatoes, cut in half crosswise (about 1 pound)
1/4 cup fat-free caesar-flavored croutons, crushed (such as brownberry)
Directions:
1. Preheat oven to 400°.
2. Combine first 6 ingredients in a small bowl. Place tomato halves, cut sides up, in an 8-inch baking dish. Cover tomato halves evenly with mayonnaise mixture. Sprinkle with crushed croutons.
3. Bake at 400° for 20 minutes or until crumbs are lightly browned.
