Ingredients:
1/4 cup extra virgin olive oil
4 large summer tomatoes
1 teaspoon salt
2 teaspoons freshly ground black pepper
1 teaspoon fresh parsley minced
1 teaspoon fresh basil minced
1 teaspoon fresh cilantro minced
1 jar roasted red peppers chopped
1/4 cup dry bread crumbs
4 tablespoons capers
Directions:
1. Preheat oven to 475.
2. Choose a shallow baking dish and grease well with olive oil.
3. Cut tomatoes in 1/4 slices and place a single layer in the dish.
4. Salt and pepper lightly then sprinkle with minced herbs and red peppers.
5. Repeat the process twice then drizzle a little olive oil.
6. Cover lightly with bread crumbs and sprinkle with capers.
7. Bake 20 minutes then chill well before serving.
