Baked Teriyaki Chicken Stir Fry

Very good served on top of rice!!!
Ingredients:
1 tablespoon cornstarch
2 cups broccoli
2 cups carrots
1 tablespoon water
1/2 cup white sugar
2 cups celery
2 cups cauliflower
1/2 cup soy sauce
1/4 cup cider vinegar
1 garlic clove, minced
1/2 teaspoon ground ginger
12 skinless chicken pieces
Directions:
1. In a small saucepan, combine cornstarch, cold water, sugar, soy sauce, vinegar, garlic & ginger.
2. Stir together & simmer until thickened.
3. Preheat oven to 375*.
4. Place chicken in a greased 9x13 dish.
5. Cover chicken with sauce.
6. Place in oven.
7. Bake for 10 minutes.
8. Turn chicken & bake 10 minutes longer.
9. Brush chicken with sauce every 5 minutes during baking time.
10. Make sure chicken is cooked thoroughly.
11. In a large skillet, add 1 T. olive oil and vegetables.
12. Stir & put in cut up chicken.
13. Stir fry until done.
