Baked Spicy Rice

This is from Southern Living and I think it tastes just great!
Ingredients:
1 cup long-grain rice, uncooked
2 (10 ounce) cans diced tomatoes and green chilies, undrained
1 cup water
1 teaspoon salt
2/3 cup pimento stuffed olive, sliced
1/4 cup vegetable oil
1/2 cup chopped onion
1 cup shredded monterey jack cheese (4 oz)
Directions:
1. Combine all ingredients in a shallow greased 2-quart baking dish.
2. Cover and bake at 350 for 45 minutes.
3. Stir well, and bake, uncovered, 15 additional minutes or until liquid is absorbed and rice is tender.
