Baked Sliced Ham and Apples

Good for a hearty breakfast, lunch or dinner. A little like German rouladen, this comfort food is from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Ingredients:
3 lbs ham slices (2 large ones, about 3/8-inch thick)
1 teaspoon dry mustard (coleman's preferred)
2 teaspoons vinegar
2 apples, peeled and sliced thinly
1/2 cup brown sugar
1 tablespoon butter
Directions:
1. Remove bone from ham.
2. Mix mustard and vinegar together; spread thinly on ham.
3. Spread apples in two layers on ham; sprinkle well with brown sugar.
4. Roll ham the long way and pin with metal skewers or tie with string.
5. Place in baking pan and dot with butter.
6. Bake at 350F for 25 to 30 minutes.
7. Baste several times while baking.
8. Allow 1/4 to 1/3 pound per serving.
