Here’s a quick but delicious recipe for Baked Salmon Fillets – perfect if you’re in a rush and you've got guests over. Rustle up moist salmon fillets baked in flavorful mustard-chive butter when you’re in the mood for an easy but satisfying dinner.
Ingredients:
1/2 cup melted butter
2 tablespoons lemon juice
1 1/2 tablespoons chopped chives
2 teaspoons dijon mustard
1 teaspoon grated lemon peel
salt and pepper
4 boned salmon fillets
Directions:
1. Preheat oven to 400 deg. F. In a small bowl, combine the butter, half of the lemon juice, chives, mustard, lemon peel, salt and pepper until well blended.
2. Line a baking sheet with foil. Rub one tablespoon of the mustard-chive butter over the foil. Place the fillets skin side down on the foil and spoon about one teaspoon of lemon juice over each fillet. Season with salt and pepper.
3. Spoon one tablespoon of mustard-chive butter over each fillet. Bake for about 15 minute.
