Baked Rice Pudding - Vegan

Adapted from a recipe on the Soy Good soymilk package.
Ingredients:
2 cups cooked rice
2 cups soymilk
3 tablespoons ener-g egg substitute
4 tablespoons water
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 teaspoon vanilla
1 pinch salt
Directions:
1. Mix all ingredients in a bowl pour into a cake pan or casserole dish.
2. Bake at 350 for 1 hour or until knife inserted comes out clean.
