A different way to serve rice
Ingredients:
2 1/2 tablespoons butter
1/4 cup chopped onion
1 garlic clove, chopped
1 cup rice
1 1/2 cups chicken broth
1/2 teaspoon parsley
1/2 teaspoon thyme
1/2 teaspoon cayenne pepper
1 bay leaf
1/4 cup toasted pine nuts
Directions:
1. Preheat oven to 400°F.
2. In ovenproof pan, melt 1 tbsp butter, saute onion& garlic until soft.
3. Stir in rice,coat.
4. Add broth and spices.
5. Cover and bake 17 minutes.
6. Stir in remaining butter and pine nuts.
