Baked Potatoes Stuffed With Crab Meat

Not your ordinary baked potato. Can be a side or good alone. Prep time includes baking the potatoes before stuffing. Cook time is after potatoes have been stuffed.
Ingredients:
6 baking potatoes
6 ounces crab meat
1/2 cup half & half
2 tablespoons butter, melted
salt, to taste
cayenne pepper, to taste
1 onion, grated
8 ounces cheddar cheese, freshly grated
Directions:
1. Preheat oven to 375 degrees.
2. Pierce each potato several times with a fork and bake for 45 to 60 minutes.
3. Remove potatoes from oven and cool slightly.
4. Cut each in half and scoop out insides, leaving skins intact.
5. Place potato filling in a medium mixing bowl, set potato shells aside.
6. Reduce oven to 350 degrees.
7. To the potato filling, add crabmeat, half & half, butter, salt, cayenne pepper and onion and whip until smooth.
8. Stuff potato mixture into potato shells and top with cheese.
9. Bake for 30 minutes or until cheese is bubbly.
