In school, we sometimes bring in homemade foods. A classmate had brought this in and I begged her for the recipe. This stuff rocks.
Ingredients:
8-10 large potatoes diced (i personally used redskinned and have to use more than recommended)
1 large can of chicken broth
2 cans bacon bits
2 8oz packages of low fat cream cheese
2 cans low sodium cream of chicken soup
1 medium onion diced
1/4 tsp. black pepper
Directions:
1. Place all ingredients into a large pot and bring to a boil.
2. Turn down heat to medium-low and simmer until potatoes are soft.
3. Serve with a little sour cream and shredded chedder cheese.
