This was one of our favorites when we worked at Ruby Tuesday. but TGIFridays are similar
Ingredients:
10 baked potato skins halves (empty of potato) or quartered if the potatoes are really big
1 tbsp.. melted butter
seasoned salt
1 green onion diced (can ommit)
1/2 c. fried bacon diced and crispy fried (about 5 strips)
3/4 c. shredder cheddar cheese (i use jack & cheddar mix like ruby tuesday does)
sour cream
ranch dressing
Directions:
1. Heat oven to 375
2. brush potato shells with melted butter and sprinkle season all to taste
3. bake for 15 - 20 minutes until crisp but not dry and hard.
4. Remove and sprinkle with cheese, bacon and onion
5. place back in oven until cheese is melted.
6. Serve with sour cream and Ranch dressing.
7. Since I have a deep fryer, the way I do it is to deep fry the potato skins after they are already baked and the potato meat is scooped out (like Ruby Tuesday does). Just for a couple minutes to make them crispy, then I continue with the recipe ommiting the baking for 15-20 min. but just putting them in the oven to melt the cheese.
8. Really oven or frying is both fine, we just have a habit of doing it like we did at Ruby's since we've been making these long before I found this recipe.
