Baked Potato Skins

The skin is the best part! Fun appetizers.
Ingredients:
4 medium baking potatoes, baked and cooled
1/2 cup finely chopped onion
1/2 cup chopped green bell pepper
2 tablespoons butter
1/2 teaspoon dried dill (optional)
1/4 teaspoon salt (optional)
3 dashes tabasco sauce
1 cup shredded low-fat cheddar cheese
Directions:
1. Prehead oven to 450 degrees.
2. Cut each potato into fourths.
3. Hollow out all but 1/4 inch of potato.
4. In a small skillet, saute onion and green pepper in butter until tender.
5. Add dillweed, salt, and Tabasco sauce.
6. Spread on potatoes and bake for 12 minutes or until crisp.
7. Top with cheese.
8. Return to oven until cheese melts.
9. Serve hot.
