A very good potato salad that is great for this holiday weekend! It is always a hit for my family!
Ingredients:
5 lbs russet or red potatoes, peeled and cubed
3 stalks celery, chopped
1 red onion, chopped
6 slices bacon, cooked crisp and crumbled
8 oz. shredded cheddar cheese
8 oz. sour cream
1 cup sliced green onions
1 cup mayonnaise
1 tablespoon cracked black pepper
salt to taste
creole spice, just a dash will do
Directions:
1. Boil potatoes until tender.
2. Place potatoes, celery, onion, and green onions in large bowl.
3. Stir in sour cream, mayonnaise, and cheese.
4. Season with salt and pepper.
5. Sprinkle with crumbled bacon and sprinkle with a little creole spice.
