Baked Potato Casserole For A Crowd

This makes a great side dish for special meals (easily cut in 1/2) or for a potluck dinner
Ingredients:
5 pounds red potatoes, cooked and cubed
1 pound sliced bacon, cooked and crumbled
4 cups (1 pound) cubed cheddar cheese
4 cups (1 pound) shredded sharp cheddar cheese
1 large onion, finely chopped
1 cup mayonnaise (do not substitute light mayo)
1 (8 oz) cup sour cream
1 tbsp minced chives
1 tsp salt
1/2 tsp pepper
Directions:
1. 1. In a large bowl, combine potatoes and bacon.
2. 2. In another bowl, combine the remaining ingredients.
3. Add to potato mixture and toss gently to coat.
4. 3. Transfer to a greased 4-1/2-quart baking dish. Bake uncovered, at 325° for 50-60 minutes or until bubbly and lightly browned.
