Baked Pizza Egg Rolls

Combining two of my favorite cuisines. Italian and Chinese. Great for parties. No sauce is needed. They will not have the texture of deep fried egg rolls, but they are still pretty crispy (and healthier too!) Read more )
Ingredients:
1 pound bulk italian sausage, sweet or hot
1 medium green bell pepper, finely chopped
1 medium red bell pepper, finely chopped
1 medium onion, peeled and finely chopped
6 ounces sliced pepperoni, chopped
16 ounces pizza blend cheese, shredded
28 ounces pizza sauce
32 egg roll wrappers
non-stick cooking spray
olive oil (optional)
Directions:
1. In large skillet, brown sausage until no longer pink.
2. Add onion and bell peppers. Cook until vegetables begin to soften.
3. Remove from heat. Drain and cool.
4. Combine sausage mixture with cheese and pizza sauce.
5. Turn egg roll wrapper so it looks like a diamond. (Keep a damp towel over remaining wrappers to prevent drying out.)
6. Spoon 1/4 cup filling just below the center of the wrapper.
7. Fold lower point over the filling, tucking it under the filling.
8. Fold left and right corners over and tightly roll up wrapper.
9. Moisten top corner with a bit of water to prevent unrolling.
10. Continue to you run out of wrappers or filling, whichever comes first.
11. Place egg rolls seam side down on a rimmed baking sheet sprayed with non stick cooking spray.
12. Brush with olive oil or lightly spray with non-stick cooking spray.
13. Bake at 400 degrees for 15 to 20 minutes or until golden brown, turning once.
