Easy and delicious chicken with a taste of parmesan and garlic. Stay moist and even great the next day. Serve with oven roasted potatoes and a salad and your family & friends will come back again and again
Ingredients:
2 to 3 pounds of chicken
1 cup of bread crumbs
1/4 cup parsley
1/4 teaspoon salt
pepper to taste
3/4 cup parmesan cheese
1 to 2 cloves of garlic finely minced
1 egg beaten
2/3 cup evaporated milk
1/3 cup milk
Directions:
1. Mix bread crumbs, parsley, salt, pepppr, parmesan cheese and garlic in a bowl.
2. In another bowl add egg, evaporated milk and milk together.
3. Dip pieces of chicken in egg/milk mixture and then coat with crumb mixture all over.
4. Place in a single layer in pan (non greased).
5. Bake at 350 until tender and coating is crispy. Approximately 1 hour depending on how crowded pan is.
6. Note: If using only chicken breasts or skinned chicken, lightly coat pan with olive oil.
