Veggie Omelet (modified) from Hungry Girl
Ingredients:
1 cup egg beaters
1/4 cup milk, nonfat
1/4 cup milk, fat free half & half
1/2 cup cheese, 2% milk
1 1/2 cups mushrooms, sliced
3/4 cup green onions
1/4 cup jalapeno
1 cup green peppers
1/2 cup tomatoes, sliced
2 tbsp parmesan cheese, grated
2 oz canadian bacon
3/4 tsp garlic powder
1/8 tsp black pepper
1 tsp olive oil
Directions:
1. Place all ingredients in bowl.
2. Mix well.
3. Pour into greased 8 x 8 baking dish.
4. Bake 30 minutes.
5. Bake additional 20 minutes until top puffed and firm.
