Baked Oatmeal Carrot Cake Version

This is a family friendly recipe and a great way to present the simple, healthy oat. There are hundreds of baked oatmeal variations, this is a good one because of the carrots- veggies for breakfast!
Ingredients:
2 cups uncooked oatmeal (not instant)
1 1/2 tsp baking powder
1/2 tsp salt
1 cup fat-free skim milk
1/2 cup egg beaters or 2 eggs, beaten
1/2 cup unsweetened applesauce
1/4 cup sugar (i use just a pinch, you can always add sugar to the cooked version-- just sprinkle on top)
1 tsp vanilla extract
1 t. cinnamon
1 cup shredded carrots
1 small can of crushed pineapple, drained
1/4 cup raisins
Directions:
1. Combine wet ingredients.
2. Add dry ingredients.
3. Bake in sprayed 8 pan at 350 for 35-45 min.
4. Let cool a bit and set-up before serving.
5. Serve with milk or yogurt or alone.
